Persian Salad Shirazi

Don't let the simplicity of this classic Persian salad, Salad Shirazi, fool you. It is full of flavor and makes a colorful and healthy side dish to any meal.
Ingredients:
4 Persian cucumbers 3 medium tomatoes 1/4 cup red onion 3 TBS chopped parsley 3 TBS extra virgin olive oil 2 TBS lemon juice 1/8 tsp salt 1/8 tsp ground black pepper
Directions:
Chop and put in a serving bowl: 4 Persian cucumbers 3 medium tomatoes 1/4 cup red onion 3 TBS chopped parsley Whisk in a small bowl: 3 TBS extra virgin olive oil 2 TBS lemon juice 1/8 tsp salt 1/8 tsp ground black pepper
